Élise and Nicolas Lachivert arrive from a village in Côtes-d’Armor of a similar size to that of Saint-Ouën-des-Toits (Mayenne). We visited many bakeries including three in Mayenne. We had a preference for the rural environment, the contact there is warm,” explains the new baker. The couple, who have been self-employed for 13 years, were attracted by this business because, among the funds they visited, none offered such well-equipped and furnished premises. The first meeting with the municipality quickly convinced them to settle here.

Special breads

It was their miller, Léandre Férard, responsible for commercial development at Grands Moulins de Rennes (Ille-et-Vilaine) who introduced them to the store, the walls of which remain property of the municipality.

These new bakers are opening under the Les gourmandises d’Élise et Nicolas brand. Artisans Banette, they offer the whole range of special breads: cereals and seeds, rustic, gourmet, the hand-made tradition as well as a return to the crispy ficelle of the morning, forgotten for several years, and of course pastries. We will quickly put a loyalty card in place,” announces Élise Lachivert.

A future grocery store

As for pastry, from Tuesday June 18, Antoine, a young Saint-Ouënnais, will join the establishment for the manufacture of all the classics: tarts and tartlets, éclairs, Paris-Brest, brioches, cream puffs but also all orders special.

Regarding the layout of the store, it is unchanged. It is functional and allows us to present a beautiful assortment of all our variants,” specifies Élise Lachivert. She adds that sandwich, drink and dessert options will be available every day.

Initially, only the bakery-pastry shop is opening this Saturday, June 15. The couple is in talks with brands for the grocery store, hoping to open it within a few months. This is another logistics that will require us to employ staff.

The whole family has made its mark in the town. Ethan and Jordan, our two boys aged 12 and 10, already have new friends and they are happy to have found a basketball club.

The delicacies of Élise and Nicolas, open Tuesday to Saturday from 7 a.m. to 1 p.m. and 3 p.m. to 7 p.m. Sunday from 7:30 a.m. to 12:30 p.m. Tel. 02 72 95 04 82.
