Holder of a licence 3 and hotel training, the new brewer Mehdi Maison has just set up in the heart of the city, in the former premises of Gamm Vert. Mehdi, passionate, sees life in white, blonde or amber, with recipes that will thrill the palates and taste buds. Thanks to a process controlled from start to finish, he is making a great reconversion after 30 years spent in the metallurgy industry.

“With my hotel training, I wanted to move on, retrain in my favorite field and launch into this new activity,” he explains. After six months of patience necessary to bring the premises into compliance, Mehdi finally obtained authorization to open his brewery on December 2. During this time, he renovated the building, installed all the processing equipment and set up a vintage space with recycled furniture, such as pallets and cans transformed into armchairs.

Six 70 hectoliter tanks

The brewery now has six vats of 70 hectoliters and all equipment necessary for processing, bottling, labeling, capping and cartoning. A heavy investment that reflects its commitment to using local ingredients, only from Hauts-de-.

Hops, malt, yeast, and even the vats are made in France, a strong choice for Mehdi, attached to “Made in France”.

Mehdi designs all his recipes, from crushing the grain to mashing, including boiling and cooling the 104 has 20°Cfermentation and integration of yeasts. After three weeks of preparation, he proceeds with bottling, labeling and packaging.
