Anyone with even the slightest interest in the Brussels (and even international) gastronomic landscape knows the name San Degeimbre. The famous two-star chef has, over the years, created a veritable culinary empire. Addresses with different concepts and looks that revolve around a flagship address, L’Air du Temps. In this traditional white farm well established in Liernu, the chef has fun imagining crazy dishes thanks to his playground, a 5-hectare vegetable garden which provides him with up to 95% of his ingredients in summer. Recently, a new bistronomic address has come to complete the culinary offering, a more relaxed and accessible address, but just as astonishing: BISTЯO.

VerTige permanently closes its doors

Alongside, the chef developed other projects, this time wearing his entrepreneurial hat. Among these satellite restaurants, we will mention Toshiro, Rizom, San Sablon, Anju and VerTige. Unfortunately, we have just learned that this last address, headed by San Degeimbre, was preparing to close its doors. “Our Brussels adventure began here, at number 19 rue de Flandre, with the desire to shake up the codes of gourmet cuisine by eating from a bowl with a spoon”explains San Degeimbre in a press release.

“After 9 years that have seen several young Chefs, a pandemic, successive crises in our sector, energy, etc., we are still here, but at what price? When Kevin Perlot arrived, I told myself that he would be the last chef to run our restaurant in the Sainte-Catherine district. Kevin Perlot arrived in 2021 at the very beginning of the post-Covid era. Almost 3 years later, he has been able to impose his style of cuisine and confirms it day after day. Today, he is one of the young chefs who count in the gastronomic landscape of our capital, even our country.”continues the starred chef. “However, it was necessary to define a moment to close the VerTige chapter. On the one hand, to concentrate on my main project – AIR DU TEMPS – and, on the other hand, to encourage Kevin to imagine a project of his own”.
