3 finalists for a supreme title

As we announced in an article at the beginning of the week, the final week of this competition had everything to be intense! In the end, 3 bakeries stood out by winning the hearts of the jury:

  • Rémi and Nathan from Pays de la Loire
  • Agathe and Arthur of Auvergne
  • Lucien and Adam from the Basque Country

These 3 pairs proudly represent their region for this final which took place this Friday, June 28.

The program of the final test

The theme of this final is a buffet celebrating 2024, a year rich in sporting events. Here are all the preparations that the finalists must make:

  • A light brioche for 10 people
  • 10 healthy and light pastries
  • A street food style snack
  • 3 pies
  • 1 nutritional and sports bread (challenge imposed by Patrick Ferrand, MOF baker)
  • 1 land and sea pie (challenge imposed by starred chef Michel Roth)
  • 24 individual portions in 3 textures for a sporty snack (challenge imposed by Franck Michel, world pastry champion)
  • 1 sports-themed decor

The candidates have 9 hours, spread over 2 days, to present a complete buffet which will be tasted by Michel Sarran, Bruno Cormerais and Noëmie Honiat.

The final outcome

Rémy and Nathan, already in possession of numerous regional trophies with their bakery, are a formidable duo. Their strategy for this final: less butter and sugar than usual, to respect the sportsman theme. Sunflower seeds, flax seeds, almonds and hazelnuts are on the program. For their land/sea pie, it is made with salmon, potatoes, carrots and seeds. The buffet decor decorated with details echoing several sports (skiing, cycling, basketball, hockey, billiard balls) won over the jury.

Agathe and Arthur, the Auvergne couple specializing in ancient wheat and organic produce, also incorporate honey into their strategy. Its sweetening power is particularly useful for making their nut-based cereal bars. Their pie is made up of sausage meat, cabbage, salmon, chicken and coriander. The item that stands out is undoubtedly their mini chocolate and fleur de sel cake, accompanied by pear compote and chocolate ganache.

But it is indeed Lucien and Adam, from Anglet, who stand out from the crowd. The marriage of their flavors is perfectly well thought out. The use of spelt flour for their preparations, the use of natural fruit sugar, their Asian-inspired pie combining chicken, shrimp, soy, ginger and lemon… Their finale is flawless and the theme is perfectly respected. Their bakery therefore receives the title of Best Bakery in France 2024!
