A signature cake that has “a lot of meaning” for the best pastry chef in the world, she explains on her Instagram account, because she created it in 2019, in homage to the Paris cathedral, which had just been destroyed by fire.
She could therefore not celebrate the completed renovation of the 4th arrondissement building and its recent reopening to the public.

It must be said that the cake features a sublime cigarette tile reproducing the rose window of the cathedral. Manufacturing secret: to make it, Nina Métayer used a 3D printer to create a small series of original molds.
Inside, in the generous and comforting frangipaneyou find “a bit of the flavors of the Three Wise Men”, namely cinnamon and caramelbut also chopped roasted almonds. The puff pastry is made with T80 and small spelled flour and Charentes-Poitou AOP butter.
Note that, in addition to Nina Métayer, Ile-de-France pastry chefs have excelled again in 2024, as evidenced by the competition for the best almond pancake in Greater Paris, the prize list of which has just been revealed.
