The Oldü bakery and its owner Ludovic Guillot no longer count their awards: best croissant, best traditional baguette, best brioche…
For the second year in a row, they won first place in the ranking of the best almond galette des rois in the Loire-Atlantique department, organized by the Fédération des Boulangers.
It is the boutique, Place Emile-Zola, bought by Ludovic Guillot in August 2024 which this time holds the title (the first Oldü bakery is located on Rue Pierre Yvernogeau).
“Work on local flours”
Contacted by Nantes news, Ludovic Guillot explains his success by “working on local flours”. “We are keen to work with mainly local raw materials, with the exception of those that cannot be found such as chocolate, vanilla or rum. But in these cases we contact French intermediaries,” he explains.
He “refines” his recipe every year “to try to get the most out of it”.
Ludovic Guillot, who fell in love with pastry “when he was young, while visiting friends of his parents” who were bakers and pastry chefs, always loved making pancakes.
It’s a product that I really like. It really is a product halfway between bakery and pastry.
In 2024, the Oldü bakery sold, in a single store, 2,500 pancakes. “This year it should be twice as much! “.
