It’s the first weekend of January, just before Epiphany on Monday, January 6. It’s the start of the season for the traditional galette des rois. A highlight at the end of the end-of-year holidays for bakers. And even more for the one who won the departmental prize for the best cake. In Meurthe-et-Moselle, the Lintingre bakery from Neuves-Maisons was crowned during the competition last November.
A victory which is a real source of pride for Laetitia Voignier, manager of the bakery: “it’s a personal pride and also for customers, because it proves that on a daily basis, we give them the maximum of what we can do […] there are people who come from far away to taste it, companies who call on us now, that generates a lot of additional sales“. Normally, the bakery sells around 1,500 galettes des rois in January. This year she is aiming for 2000 to 3000 cakes. It was therefore necessary to recommend beans in particular and reorganize production.
“Make pancakes to get ahead”
Part of the team had a meeting this Friday, January 3, an exceptional closing day, explains Nicolas Lintingre: “it was to rest at the base for after the holidays but given the competition, we said to ourselves that we were going to make pancakes to get ahead“. Nearly 200 pancakes were produced during the day, 500 are planned for sale over the weekend. Martial takes care of the frangipane cream and he is very proud of this victory in the competition: “We’re not far away every time and this year, it’s good he won. Afterwards, we have to take responsibility, do the work but we’re super happy“. So what is the secret of this pancake? A recipe that evolves a little each year for Nicolas Lintingre: “for us, it’s frangipane, a mixture of almond cream and pastry cream, it’s a little rum and this year, a little vanilla“.
There remains a very small disadvantage for the team, as Martial explains: “normally, there will be no losses, the problem is that we like it when there is a little left because the next day, we eat them“.
