Made on the basis of inverted puff pastry, all garnished with a good frangipane cream made from pastry cream combined with almond cream flavored with an exceptional rum (Eldorado, 8 years old, with notes of vanilla and dried fruits), it is to die for. For those who want a little pep, Christophe Louie also offers a Galette des Rois with candied lemons. Also, on a base of inverted puff pastry, this creation is distinguished by its hazelnut frangipane cream, decorated with citron confit IGP.
