THE FIGARO SELECTION – Located in historic places or playing the creativity card, these restaurants stand out from the crowd.

The episcopal city contains well-marked addresses, five of which caught our attention.

The most panoramic: La Vermicellerie

The place. Here, there is something to see and eat. After crossing the Pont-Vieux, we enter the Madeleine district to perch in this hotel-restaurant which offers the most beautiful view of the city over the Tarn. The building is one of three old Albigensian mills which border the river. If, on the terrace, the sound of the current can be heard, this is not at all the case in the brick room, facing Sainte-Cécile Cathedral.

The plate. Pasta, yes, but local. Renaud Jeanne, director of the establishment, and his chef Guylain Carre worked hard to revive the spirit of the mill, whose vermicelli production was the pride of the town until everything stopped after 1950. Result : they make their own fusilli and large macaroni with durum wheat semolina provided by a local flour mill. Sometimes nostalgic, with a beautiful pasta broth on the menu…
