Pit Stop means pit stop in Formula 1. It is this universe that Erwan Vapaille wanted to transcribe in his Pit Stop pizzeria in Bagnoles-de-l’Orne, in Orne. In the former premises of the La Fontaine creperie, which closed several years ago, the F1 enthusiast decorated the executive room of driver Lewis Hamilton and Charles Leclerc. The young man opened his restaurant around ten days ago and offers around thirty pizzas. “ The dough is homemade and I work with local products, honey from the Durcet manor in Magny-le-Désert, camembert from Champ secret in Champsecret, cream from the Landegas farm in Bagnoles », he explains.
A family story
His parents, originally from Meaux (Seine-et-Marne), settled in Bagnoles-de-l’Orne when he was just born in 2004. His father, who worked on weekends in a pizza kiosk in the region Parisian, took over the pizzeria Il Coccodrillo before founding the fromagerie des Roches. “ I was born into it, I hesitated to do a CAP in cooking. Finally I went to the MFR in Breathe for a professional agro-equipment baccalaureate to be a driver of agricultural machinery. I spent five years on different farms », recalls Erwan Vapaille.
Finally, he returns to his first desire and to the family heritage. He trained in his cousin’s pizzeria in the south of France, then in a pizza maker school near Pau (Hautes-Pyrénées). In his pizzeria, where there are around fifteen seats, his father is there to give him a hand. Erwan Vapaille will also offer ice cream in the summer.
