This Wednesday, September 18th marks the reopening of the Le Corbier restaurant in Brussels. The establishment is located a stone’s throw from the Sablon, in the center of the capital. It is taken over by the entrepreneurial couple Arnaud le Grelle and Delphine Roberti de Winghe. The place is presented as “ an epicurean address where each moment celebrates the senses and tells a story, around the grills that have so well established the reputation of this place “.

What to expect?

Among the starters on offer, there is a pan-fried wild mushrooms with black garlic paste (€21) or scampi with mild Espelette pepper and tomato cream (€19.50). Classics of Belgian gastronomy are also on the menu with croquettes with grey shrimp or cheese, chicken vol-au-vent or even the homemade American served with fries and a green or mixed salad. Among the other dishes that we want to try, we will mention the creamy risotto with scallops grilled over a wood fire, the roasted cod back with its caper-tomato mousseline sauce. What about desserts? You have the choice between brioche French toast with vanilla ice cream, crêpes Suzette, as well as a chocolate mousse with praline and its salty crumble.

In addition to the dishes on offer, the interest of Le Corbier lies in its decoration designed by Gérald Watelet. He explains: ” Every color, material, tableware, including the lighting, the menu and the facade… everything has been designed to reflect an authentic art of living “. The benches are covered in buttoned velvet, the floor is carpeted to absorb noise. Bricks, old beams and a beautiful fireplace are to be discovered. The highlight of the Corbier’s decoration is a skylight installed to energize the 130 square meter space.
