Supported by the town hall and its mayor Don Marc Albertini, this project aims to promote local heritage and offer new economic prospects to residents. Installed in municipal premises, at the rear of a hangar, the flaming mill new was designed by the craftsman Auguste Jaeger. Its commissioning this year marks an important milestone for the village, with experimental production of one ton of flour from this first campaign. “This mill is the symbol of a new dynamic for Ghisoniexplains Mayor Don Marc Albertini. The chestnut grove is at the heart of our history, but it was no longer exploited to its full potential. This project is a way to bring this natural and cultural wealth back to life.”

A promising economic dynamic

Chestnut flour, an emblematic product of the island, can be particularly profitable. “With 500 kg of flour, a farmer can generate between 7,000 and 8,000 euros in profits, specifies Don Marc Albertini. We produced one ton this year on an experimental basis, but some are already planning to increase to three or four tons. This would represent a real economic gain for our producers.” Next year, the town hall plans to entrust the management of the mill to a professional, while leaving the infrastructure accessible to residents. “We want to offer a powerful tool to the community, which can be used by everyone, in a spirit of sharing and collaboration”, underlines the mayor.
