Who says December, says Christmas but also the final of the national competition for the best almond cake. The regional stage was held on Monday September 23 in Bains and allowed a jury made up of employees, business leaders and Meilleurs Ouvriers de France to determine which artisans would compete in the final.
No Altiligère finalist this year
Sunday 1is and Monday December 2 will be dedicated to the long-awaited final phase by the 20 artisan bakers from all over France. It is at the Professional Training Institute (IFP) in Bains that Aurhalpins Sébastien Roissac and Sébastien Triboulet, both respectively managers of their boutique in Ardèche and Allier, will be able to compete. This year, no Altiligerians will be present at the competition.

Regarding the choice of location, IFP 43 was obvious. For what ? Because the final of the national competition takes place in the department of the winner of the previous season. It is therefore in the premises made available by the establishment that the candidates will be able to create the pancake which will perhaps be crowned best almond pancake. The Holy Grail for some who after a consecration doubles or even quadruples the number of cakes sold in their shop. Frédéric Alvergnas confided that Hervé Bodet, winner of the first edition, had had record sales. “It went from 2,000 to 8,000 pancakes over a month, including 5,000 in the first week. »
The competition, managed jointly by the national confederation and the regional federation, will therefore allow an artisan baker to stand out in their technique, their filling or the finish of their almond pancake.
Sébastien Triboulet, an artisan baker based in Allier, will represent the Auvergne-Rhône-Alpes region during this national final.
