Between 12 and 14 commercial cells, from 18 to 44 m2, will be located in these gourmet halls, which are due to open in a year. A margin on the number of businesses is kept, “according to each other’s shelf needs”, specifies Bruno Bertier, deputy mayor, in charge of urban transition. On certain stands, purchases will also be possible from outside the hall.
A large commercial cell of 200 m2 will host a restaurant and a bar, on one or two levels, with perhaps two different project leaders. “Five candidates have already come forward,” explained Florian Bercault, during the site visit at the beginning of June. The lucky winners will be known before the end of the summer.
Technical room, concierge, cold rooms…
The mayor recalled on this occasion that “the idea is to balance the cost of the project, with a debt covered by rents”over 20 to 22 years. “A holiday rate is planned in the financial project,” adds Florian Bercault, this Thursday, June 27.
The building will also include “a technical part, along rue de Strasbourg, with the staff entrance, a cloakroom, eight 4 m cold rooms2a waste room, an electrical one… ”, Bruno Bertier list. A concierge service will allow “collect your dishes and products, ordered in advance, outside opening hours”.
To put music to the setting up of the different stands, in conjunction with the traders, a “conductor” will take “his functions soon”. She will then become manager of the gourmet halls.
