It’s a very busy time of year for pastry chefs, chocolatiers and other confectioners: the end-of-year holidays. However, this period is Nina Métayer’s favorite. “We love it!”, she explains on the microphone of Europe 1 morning weekend. “It’s the best time of the year, we work every day for this period, and now it’s successful.”

A cake in homage to Notre-Dame de Paris
And this year, the epiphany has something special for the best pastry chef in the world 2024, since she presents a model of pancake in homage to Notre-Dame de Paris. “I made a first version of it five years ago, when it burned. And then this year, it was inevitable, I had to release it in the nicest conditions.”
But while the French are preparing to taste their pancakes, the pastry chef already has her mind elsewhere. “In fact, creation never stops, we are constantly trying, creating. We are even already on the Christmas logs for next year.”
