It was in 2016 that Daniel Faustini created the L3G restaurant group with Yann Puccia and Sébastien Exertier. It includes the restaurant “Les Quatre Gourmets” located in Annecy-le-Vieux, three Italian catering establishments called “Mapp”, in Pringy, Annecy-le-Vieux and Seynod, as well as a catering service.

Mapp means “friendly pasta and pizza factory”. A modern and offbeat name, like its concept. That of offering quality Italian fast food on site or to take away in the heart of Annecy and its surroundings.

The three partners also offer restaurant advice to colleagues in the region. In each restaurant in the group, employees cook, serve and maintain the premises, each time with risks linked to the position they occupy. To preserve their health and safety at work, L3G managers called on AST74.

Preventing professional risks

“We discovered through our HR department that in addition to mandatory medical examinations, the AST74 teams also supported companies in drafting the single professional risk assessment document (DUERP), recalls Daniel Faustini . Some employees risk cuts, burns, or slips while cooking or serving, others risk injury while carrying goods or driving the warehouse forklift. »

Each position was the subject of recommendations, awareness raising and sometimes proposals for adjustments, such as safety overshoes for the risks of crushing linked to the warehouse, equipment to facilitate the carrying of loads in the kitchen or in the dives.

“For our administrative teams, it is sitting for a long period of time or the risk of musculoskeletal disorders (MSD) that poses a problem,” continues Daniel Faustini. I am a trained chef and now an entrepreneur, but not a specialist in issues related to the safety and health of my employees. AST74 helped me better understand these risks. They also gave us a lot of advice on postures, professional gestures, etc. We sometimes hear that these interventions would be a waste of time and we wait until there is a problem or an employee is absent to call on professionals like those from AST74. It’s a shame, especially at the moment, in a hotel and catering sector where recruiting and retaining employees remains very complicated. Having all your staff in good shape and good health is essential. »

An AST74 ergonomist was asked by one of the group’s restaurants to help an employee on sick leave due to back pain. Recommendations were made to improve working conditions, such as the use of trolleys on wheels to limit carrying loads, soles for trampling, new adapted glasses, etc. Another person with hearing problems and bothered by noise in the kitchens benefited from a reduction in their working hours, thanks to the intervention of AST74 and Cap Emploi.

“Employees sometimes feel more comfortable sharing their difficulties with a trusted third party in the company rather than expressing them directly to their boss,” recognizes Daniel Faustini. Ultimately, this approach helped improve employee safety and satisfaction by showing that their needs are being considered and facilitating communication about workplace health. »
