Gault&Millau: François-Xavier Simon, chef of Bistrot Blaise in Marche, elected young Walloon chef of the year (+ Ranking of restaurants in the province)

This is not the only representative of our province in the Walloon 2025 rankings. Thus, “The Plural” (Transinne) receives the Walloon Pleasure Prize 2025 while The Big Glass (Durbuy) is named “Wine List of the Year”.

La Table de Maxime always on top

In terms of establishment ratings, it’s once again “Maxime’s Table” (Paliseul), whose chef Maxime Collard was elected chef of the year 2024, which receives the best score in the province of Luxembourg with 17.5 out of 20. A score which represents an evolution compared to 2024 when his establishment was credited with a 17. In second position is “The Hunting Horn“, in Wéris, with 16.5 (like last year). Then, “The Golden Cluster” (Arlon) and “The Big Glass” (Durbuy) share third place on the provincial podium with a score of 16, also like last year.

Note, three new appearances in this Gault& ranking: Le Coprin (12.5; Herbeumont), Cultures (12; Redu) and the Castle of Mirwart (13; Saint-Hubert). While several establishments, apart from the Table de Maxime, have seen their rating improved: The Florentine (12,5 ; Florenville), The Episode (13.5; Herbeumont), Table and Counter (12.5; Libramont), Bistrot Blaise (14.5; Marche-en-Famenne), The Transinne Barrier (13.5 ; Transinne) et The imprint (13; Vielsalm).

Enjoy your food.
