After the gold medal for Alice’s farci at the end of 2023, Xavier and Ophélie Meureau are setting the gold table again, in this year 2024, for two of their specialties: black pudding with onions and old-fashioned country pâté .
Each year, the Saveurs Nouvelle-Aquitaine competition highlights regional products, flagships of the know-how of local producers and businesses.
The 2024 session took place on November 8, 2024 in Royan (Charente-Maritime) highlighting competition with emblematic local products and original recipes. Several hundred products were tasted blind by jurors.
At the end of the day, the gold medal was awarded to black pudding with onions and old-fashioned country pâté, made by La Belle Rouge, from Périgné. These awards are in addition to the silver medal already awarded to the butcher for its old-fashioned white ham, the bronze medal for its pork rillettes in 2022, and gold for Alice’s stuffed poitevin in 2023.
“We respect a precise dosage”
Their secret? Xavier Meureau explains that for black pudding, “It’s the cooking of the onions and the quality of the meat that make the difference. We respect a precise dosage of meat. As for country pâté, slow cooking helps maintain its softness and all its flavor. »
For the end-of-year celebrations, Xavier and Ophélie Meureau prepare old-fashioned white pudding, the famous pudding made with Poitevin stuffing, foie gras, and home-smoked salmon.
