A few days before the epiphany, the departmental competition for the best pancake in Haute-Garonne took place. Four categories were highlighted: brioche des rois, frangipane, crown of Limoux and a category dedicated to apprentice pancake creators.No less than 51 artisans competed: 21 in brioche, 19 in frangipane, 5 in crown of Limoux, and 8 apprentices. The jury, made up of four experts for each category, had the arduous task of deciding between these exceptional creations. Among them, the famous Michel Sarran.
Brioche of kings The brioche des rois category saw the triumph of Dimitri Bordon of Primer us has Cugnauxalso World Champion of Chocolate. Already winner of the frangipane last year and second at regional level, he adds a new distinction to his list of achievements. For Dimitri, no secret, to get there, you have to “work and love what you do. I do my best trying to aim for what the jury likes.”Second place went to Damien Valentie of Little Madam has Pinsagueland the third prize was awarded to Hugo Poite of The Creed has Toulousealready winning in 2022.
Frangipane Clément Dejardin of At the Little Bonnetons has Plaisance-du-Touch won first place with a light and crisp frangipane.
“We did several tests to perfect the texture, cream and taste. I wanted a soft frangipane that was close to perfection,” he shares. Clément, who participated for the first time, now qualifies for the regional competition. Having been cooking for 10 years, Clément perfected his recipe for more than a month, trying again and again, and “by letting others taste“, he adds. Collecting his prize, he declares with humor “I came here to win something, and I'm happy to leave with this prize“. Second place was awarded to Jérémy Ferrand from The Montberon House has Montberonand Jonathan Grodin of The Blanchard House has Blagnac completes the podium.
Crown of Limoux Sébastien Baye of The Crazy Aprons has Fonsorbes dominated the crown of Limoux category thanks to a particularity: he candied his own fruit.
“We work with fruits all year round. At the moment, it’s citrus fruits, but we also do melon, strawberries, figs, and pears.”Francis Pagès de Au Bon Quignon has Toulouse took second place, followed by Éric Thevenon of The Thevenon House has concern, already rewarded for its brioches two years ago.
Apprentice creators: A promising next generationIn the apprentice category, Bilel Lajmi from the company Fimouchkine has Toulouse established itself with a remarkable creation. Second place was awarded to Steffi Goba from Leaflet has Bouloc, and the third to Urbain Bedot of Fred L’Artisan has Ramonville.
