The most anticipated new restaurants in in 2025

At the start of the year, a great range of talents, followed and supported by Time Out for a long time, are finally setting out on their own. Could this be the beginning of the end of the flying chef trend? Either way, we can't wait to try these new plant-based tables, Franco-French, Korean or Japanese, which are arriving in January!

Daimant Saint-Honoré

Alice Tuyet is expanding her plant empire! She is enhancing her Faubourg Daimant with this Daimant Saint Honoré in place of Michel Rostang's Absinthe in front of the Saint-Honoré market. It will benefit from a beautiful terrace and a fireplace for grilling vegetables. Because obviously, we will find the same zero animal protein approach in glossy plates of vegetable sauce and kif. Given the neighborhood, the barge will undoubtedly be more real than faubourgeois, but who doesn't need a mushroom croquette when returning from shopping at Place Vendôme?

Marked by the inventive and Asian dishes served at CAM in 2018, foodies are flocking to the rare Parisian residences of Korean chef Esu Lee (Mokoloco, Chez Stina, Au Passage, etc.). Good news, he will – finally – open his own address: Jip (meaning home in Samsung’s language). What to expect? Korean recipes Bim bim bap hooray!

The work, we know when it starts… Florent Ciccoli planned to open his new address in November, it will probably be January 2025! But if the calendar slips a little, the idea remains the same: this serial opener (l'Orillon, le Café du Coin) moves away from the typical Parisian bistro to offer a Sri Lankan restaurant in place of a former caterer Chinese!

Accustomed to putting his talent into the prestigious addresses of others (the Plaza Athénée, the Domaine de Primard, etc.), Romain Meder finally settles down at home in Paris. He will take over Garance in the 7th, a chic address where Alexis Bijaoui started. We can't wait to taste the bucolic cuisine as close as possible to the producers of this extraordinary chef.

Former chef of the botanical restaurant Botanique converted to events, Sugio Yamaguchi is adding a line to his CV by opening Wani, his own tea room. On the menu, in addition to infusions and pastries, he will offer savory dishes, notably his famous celery remoulade with which he won the 2022 world championship!

Restaurant Masa Ikuta

Masahide Ikuta (finally) at home. The trained Japanese chef who sparked a stir at Les Enfants du Marché had never had a restaurant of his own before. It's done with this small restaurant of 35 seats in the middle of the 11th. On the menu, a return to the French gastronomy of his beginnings when he was with Bruno Verjus or Stéphane Jego of Ami Jean but with a Japanese twist.

The chef who made his name at Villa 9Trois in and won the French selection for the S.Pellegrino Young Chef Academy 2023 has found his own restaurant. Opposite to Montreuil (geographically and culturally) he settled in the 16e district at Place de Tang, legendary Chinese restaurant. The chef from , whose mother is an architect, will take particular care in decorating his address.
