Jérémy Frenais opened in May the restaurant Les Cocottines on the port of Paimpol (Côtes-d’Armor), at Riva Squareremained there for almost ten years.

At 38, and after working for more than twenty years in the restaurant business, he set out to create his own business.

I went to work in nearly ten French regions and also in England and Switzerland. I have been in the restaurant business since I was 16, I have worked in all positions, such as waiter, room manager. I knew that one day I would have my own restaurant.

Cordon Bleu great-grandmothers

Originally from Saint-Quay-Portrieuxthe new manager found the recipe book of his two great-grandmothers who cooked in bourgeois houses, from 1898 to 1935.

He decided to take inspiration from this to offer in his menu: sauce recipes made in casserole dishes, hence the name of the brand.

100% Italian products

Jérémy Frenais has taken over all the staff who were already working in the old establishment with Aurélie in service, Laurent and Tristan in the kitchen. He also employs two seasonal workers, Christine and Sébastien, to complete the team.

THE Italian specialtiesit is Tristan’s department with the making of traditional pizzas :

I kept my supplier of 100% Italian products, this is essential for me, all our pizzas are based on tomatoes and crème fraîche.

Takeaway products

The new restaurant also offers take away food as the croque-monsieur old-fashioned made with a loaf ofspelt made by a baker from Paimpol, a burger artisanal with English cheddar, a chicken whole with fresh fries with beef fat and of course the pizzas.

In the summer, Jérémy Frenais will prepare the afternoons of aperitif boards Breton charcuterie and cheeses.

This winter, he will develop his menu of casserole dishes and cook raclettes and pierrades with different marinated chickens.
