The Table of the Fathers, starred restaurant at the heart of the Domaine du Château des Pères in Piré-sur-Seiche (Ille-et-Vilaine), decided to develop an original concept for taste lovers and new experience.
This is how a new space dedicated to creation of cocktailsin a bucolic and rural atmosphere.
One year of work
It took a year of work for the old greenhouse of the Château des Pères to come back to life in the heart of the vegetable garden. Julien Legendre, director of the Estate, made a point of ensuring that it was restored identically, while respecting the original architecture. The majority of metal structures have been preserved and repainted. All of the glassware, too deteriorated to be restored, was carefully replaced by a glassmaker located a few kilometers from the castle.
After this long restoration period and a few phases of operational testing, the greenhouse officially opens its doors.
Arranged to accommodate guests in its interior spaces as well as in terracethe Greenhouse offers a space for country toneswith tiled floors, subdued lights and an intimate atmosphere after dark.
Decorated with multiple plantscarefully chosen by Carole, the Château's gardener, the Serre is a place where nature and gastronomy come together.
A taste and sensory experience
Maxime, mixologist, imagines and creates cocktails on site with vegetal notes, and draws inspiration from each of the flowers or aromatic herbs of the garden.
Elegant and retro, La Serre offers guests an experience that is both gustatory et sensory in an atmosphere at the heart of plants.
The greenhouse is initially reserved for customers of the La Table des Pères restaurant and the EssenCiel hotel to guarantee a controlled service.
Before or after meal time, customers who reserve a table in the Greenhouse will be able to enjoy homemade cocktails, revisited classics or creations, made by Maxime and Annaël, who accompanies him.
I was able to work for several months within the Table des Pères team, a time which allowed me to think about the universe I wanted to create in the Greenhouse. I was therefore inspired by the service that is both relaxed and attentive, which puts people at the center of everything, but also by seasonality, which allows me to imagine cocktails based on garden products and my more personal inspirations. .
This new place is currently accessible by reservation only, at the price of 16 euros per personand gives access, for this price, to the tasting of a cocktail of your choice and a set of appetizers, finely made by the cooks of the Table des Pères.
