Regularly, “Les Bonnes Choses” come out to show, hear and taste the world outside the Maison rond studio. Head this afternoon to the annual meeting of the Collège Culinaire de France and its large Marché Complice. Enough to meet a few culinary artisans and ask them what it means for them to be a quality activist today and tomorrow.

The Collège Culinaire de France was created in 2011 with the idea of ​​developing a trend in artisanal gastronomy through activist action. Based on the principle that there is a great diversity of regions, products and cuisines in France, this associative movement works to defend this richness in the face of industrialization and the standardization of food. A completely different vision of the world is then proposed: against the industry making food a simple commodity, the Culinary College of France defends food as a culture. Michel Guérard said: “we should learn to eat as we learn to read”.

The project is to bring together various culinary artisans to form a meeting and mutual aid collective. Recruitment is not based on a value judgment but more on the approach of the artisan, on his culinary identity, on his sincerity and his desire to work as a collective. It is the human relationship that takes precedence.

The artisans we met share this particular care given to production methods and a great sensitivity for the art of eating well. Short circuits, seasonality, autonomy and respect for the earth are the pillars!
