This is news that many have been waiting for. Particularly those who feasted on restaurant L’Ambroisie in Albi (Tarn). Its former chef will open a new restaurant at the beginning of July in Carmaux.

The reputation of Yasmin Geze goes far beyond the borders of Tarn. And even Occitanie. After studying cooking in Mexico, the 38-year-old chef went to France and the Pyrenees to follow the advice of a master chef. She found much more there. A husband and accomplice, Guillaume (42 years old), who has since worked with her in the theater.

A three-star experience

The chef also went, excuse me, through the kitchen stoves.Alain Ducasse at the Plazza Athénée in Paris, but also those of Michel and Sébastien Bras in Laguiole, in Aveyron, Michel Sarran in Toulouse or at David Enjlaran at the Esprit du Vin, while it had a Michelin star in Albi (it closed in 2015).

Seven years at Ambrosie

Then, the couple set off on the adventure of Ambrosie, in the center of the Tarn prefecture. A gastronomic institution. After seven years of wowing taste buds there, the couple decided to make a new start.

“There were only 20 seats at Ambrosie. And it was always full”specifies Yasmin Geze at Occitanie News. But too fair in the face of the excellence of the products.

In search of a new horizon, the Gezes are approached by the mayor of Carmaux, who tells them about the Tower of Ciron (and its restaurant, Boeuf marin). It was two years ago. But there was already someone in charge. And the couple had decided something else. After a season at the Château de Salettes (in Cahuzac-sur-Vère, in Tarn) and another as caterers for weddings in particular, he decided to go to Gers…

Months of work

Except that in the meantime, the Tower of Ciron was left free. Built on the remains of an ancient castle, this building was first the “Cashier’s House”where miners came to collect their pay until 1860.


It then changed its destination by hosting sumptuous receptions reserved for administrators and officials… A place steeped in history. And magnificent.

It will therefore be Carmaux. “Since January, we have been working hard,” explains Yasmin Geze. The new location will be called Inicio. It will open on July 10, 2024.

Very affordable menus

It will offer a maximum of 40 seats. “There will be a daily menu at 22 euros for lunch and one for 35 euros in the evening. Each time with two choices of starter, main course and dessert,” explains the chef. And also a tasting menu at 65 euros. “Depending on inspiration,” says Yasmin, who promises her “cooking from the heart”. “I was trained by French, Swiss, Mexican chefs… I draw inspiration from people who are close to my heart,” pleads the chef, who does not highlight any specialty. “I will follow the seasons…” she whispers.

The restaurant will be open from Wednesday to Sunday at noon as well as Thursday, Friday and Saturday evenings.

And in front of the plate, she expects to find familiar faces. “We have a clientele that follows us,” she rejoices. The Albigensians will therefore be there. But there is no doubt that many others will also come and taste the flavors of Geze.
