It is located on Avenue de Bordeaux, in Bias, next to the Cash Piscines store. The Bistrot Régent, Villeneuvoise version, has just opened its doors this Tuesday, June 18. The establishment, with 190 to 200 seats, therefore offers a new catering offer in a commercial, franchised area.
At the origin of the project which was established on a plot of land of more than 1,300 m² are three partners, all from Villeneuve: two chefs and an entrepreneur. Jean-Pierre Galinou, founder of the Cash Piscines brand, which now has around a hundred stores in France, has joined forces with Jean-Baptiste Fabre and Julien Crasbercu.
Fresh produce in the kitchen
The first made his name behind the pianos of La Toque Blanche in Pujols, Stelsia, or more recently Domaine de Bugatel. The second, trained in the kitchens of Au bord de la source, in Sainte-Livrade-sur-Lot, then worked in Corsica and Biscarrosse, before returning to Lot-et-Garonne: “We wanted to that our establishment’s menu is made with 95% fresh produce. This is what the Bistrot Régent brand allows us,” explains Julien Crasbercu, who explains their location in a commercial zone by “a need for a large volume that is difficult to find in the city center. »
If the two chefs will not get into the kitchen, they will keep an eye on the menu developed by the brand for all its establishments. A team of 12 people has been recruited to provide service seven days a week, noon and evening. “The challenge is to allow people who work to be able to have lunch in half an hour,” adds Julien Crasbercu. The interior decoration is due to the personal touch of the three partners, in particular the terrace, which they wanted to be “cozy”.
