Inspired by the emblematic red marquise that adorns the hotel entrance, this creation combines chocolate, spices and caramel for a festive dessert that is both gourmet and refined.
This season, Paris is adorned with its most beautiful finery: the windows light up, the Christmas markets flourish and the sweet scent of spices spreads in the air… At the heart of this festive atmosphere, the Royal Monceau – Raffles Paris reveals its Christmas jewel: a log signed by the Pastry Chef Yazid Ichemrahen and his sidekick, the Executive Chef Alexandre Favre. The inspiration behind the Royal Monceau Christmas log 2024 ? The iconic red marquise which adorns the entrance to the palace, itself inspired by a mysterious noble lady, always dressed in red, who would once have stayed in one of the luxurious suites of the hotel.
Revisited in finely crafted chocolate in the spirit of wrought iron, the marquise seems to float at the top of this haute couture dessert, placed on an impeccable mirror glaze. A silver chocolate medallion, stamped with the Royal Monceau emblem, crowns this refined creation, enhancing the singular and sophisticated look of the establishment.
On the flavor side, the log focuses on rich and comforting pairings: an airy chocolate mousse infused with farm milk, flavored with cinnamon, anise, and other Christmas spices, envelops a creamy heart of hazelnut praline and melting caramel , all on a crispy almond and chocolate biscuit.
