Based in Lozère, at the Col de Montmirat, Bagnolais Jean-Patrick Bonaldi is a cook-butcher-charcutier-caterer. With his daughter Stéphanie, he has just opened a business selling local products from Lozère in the heart of the capital of Rhône Gard.
A new business opened its doors on Monday, Place Mallet, in place of the Dressing des Cendrillons, under the arcades. La Boutique de Montmirat is like the branch of the restaurant, processing laboratory and boutique of Jean-Patrick Bonaldi, a native of Bagnols who was once a butcher on rue de la Poulagière. He is based in Lozère, in Saint-Etienne-de-Valdonnez, and in 2017 bought the Auberge du col de Montmirat on the main road which links Mende to Nîmes. The quality of its products has earned it fame and recognition.e. “My father chooses his Aubrac meat from a neighboring breederexplains his daughter, Stéphanie Bonaldi, the manager of the Bagnolais store. Then he takes care of the processing, he does everything, dishes in jars, terrines, cold meats. The same goes for game. It is therefore an ultra-short cycle and circuit. We’re bringing a bit of Lozère to Bagnols!” In addition to meat products, the shop offers honey, cheese, yogurt, biscuits, flour, lentils, etc., again from Lozère farms. To run the store with Stéphanie Bonaldi, Sephora Chorlet, delighted to participate in the adventure: “I am an epicurean. These are beautiful products. They are beautiful products, we know where they come from, how they are transformed…”
