On the day of our Spartan meal, beef ramen was served to us by chef Ruben Asseman. Belgian. A Flemish Belgian cook enjoying Asian gastronomy in Cathar land, pretty Belgium. Having arrived in Chalabre 4 years ago, he met by chance the chef of the Créa Mundo restaurant in Léran, in neighboring Ariège. Ruben, as much a cook as Bocuse was a stonemason, but ready to embark on this sudden change of existence, quickly replaced the former clerk who was ill. On the job, he took an interest in the sweet madness of the songs of the frying pans and the fiery cooking of small onions. In addition, he combined a Belgian-style vegetarianism – he didn’t ask us what that consisted of – with the irrepressible demand for meat from the local tribes.

We cannot blame him for his good taste for French, Italian and Asian cuisine, a trio that inspires his preparations. “Le Local” offers a simple formula on a single menu: starter, main course and dessert at 18.50 euros and 16.50 for two courses, with openings only in the evening during the week as summer approaches and, closed on Wednesday evening, so as not to interfere with the village’s gourmet market that day.

To come, an “oysters and white wine” formula on Sunday lunchtime during the summer season will be put in place, with a special tapas menu for Thursday evening. She appropriates the fate of this Aragonese princess who lived for a long time on the lands of Puivert, spending her time contemplating the lake which one day engulfed her due to a sudden flood. Inspired and inhabited by the music of the troubadours and the legend of the White Lady, Rachel in her journey which begins at the Quercorb museum and follows the side roads to the Puivert castle, will tell you the adventures of Bernard de Vontadour or Guillaume d’Aquitaine, first known troubadour and grandfather of Eleanor of Aquitaine.
