On the occasion of the 25th anniversary of the Hôtel de Glace de Québec, the establishment is opening its first ice restaurant by Fairmont Le Château Frontenac.

On January 17, 2025, the Hôtel de Glace de Québec will open the first restaurant in America built entirely of ice. This unique project combines the culinary expertise of the famous Fairmont Le Château Frontenac and the exceptional talent of the sculptors of the Hôtel de Glace. The unique opportunity to live an exceptional culinary experience in the heart of the Quebec winter.

An unforgettable culinary experience

The expertise of Fairmont Hotels & Resorts, recognized worldwide for its quality, is evident in this exceptional culinary experience. Thus, on Fridays and Saturdays, until March 15, 2025, gourmets will be able to enjoy a three-course menu. With a limited number of services, this exclusive offer guarantees a privileged and intimate experience. In addition, boreal and winter flavors will be highlighted through comforting and refined dishes. For example, guests will be able to taste a wild boar bacon broth, foie gras and porcini brunoise. Without forgetting tender beef ribs. Additionally, fans of vegetarian cuisine will also enjoy a nori-crusted panisse, accompanied by delicately roasted root vegetables. Finally, the place inspired a snowball-shaped dessert, combined with the sweetness of coconut and passion fruit.

A decoration inspired by the 4 elements

Since 2000, the Hôtel de Glace has been a symbol of the Quebec region, offering a magical winter experience that attracts visitors from around the world. Inspired by this tradition, the restaurant will offer a welcoming atmosphere with comfortable elements to promote relaxation. Additionally, sculptures representing the four elements will be elegantly embedded in the ice. Indeed, a majestic volcano will illustrate fire, a delicately sculpted mill for air. While waterfalls and rivers of ice will represent water, and a striking representation of magma for earth.

Discovery package

For $225 per person, it is possible to take advantage of a discovery package. A shuttle will transport participants from Château Frontenac to the Hôtel de Glace, where a welcome cocktail will await them. A visit to the Ice Hotel will also precede dinner, before being taken back to town using the shuttle. Reservations are now open online.
