Sophie Sillère knows the Perrier du Bignon hotel and its restaurants like the back of her hand. “ I’ve done everything here, from washing to reception, from serving to welcoming », smiles the young woman of 23 years. And for good reason: it is his grandfather, Édouard Perret, who is the historical founder of the Laval establishment (Mayenne). “ From the end of my childhood, I was here at home and helping out. I know everyone, and especially everyone’s activity.
