Le Périer du Bignon, Le Petit Périer, L’Épicurien and Le Patio: these four establishments in Laval (Mayenne) now have a new general manager, Sophie Sillère. She is the granddaughter of the historic director of these brands, Édouard Perret.

Sophie Sillère knows the Perrier du Bignon hotel and its restaurants like the back of her hand. “ I’ve done everything here, from washing to reception, from serving to welcoming », smiles the young woman of 23 years. And for good reason: it is his grandfather, Édouard Perret, who is the historical founder of the Laval establishment (Mayenne). “ From the end of my childhood, I was here at home and helping out.
