The Jeanne-d’Arc-Saint-Ivy high school, in Pontivy (Morbihan) welcomed, on November 13, 2024, the 70e edition of the regional competition for the Best Apprentice Chefs in France. Only three high school students participated in this competition: Salomé Carnac-Audic, from Saint-Ivy high school, Cyrielle Cazorla and Hugo Vanhoutte, from Paraclet high school, in Quimper (Finistère).
Chefs Arnaud Pitrois and Xavier Jégoux evaluated the technicality in the kitchen, while the tasting side was judged by Johan Marchand, Thomas Critérin and Daniel Jaguin.
You have four hours!
Serge Adam, master chef from France, founder of the gourmet restaurant Le Grand Largue, in Port-Navalo, in Arzon, and delegate from the Brittany region, encouraging the three young people:
You can get this menu out to me in four hours!
Horseradish-crusted salmon…
The theme: small, all-vegetable stuffings, horseradish-crusted salmon, crunchy vermicelli with poached egg, siphon béarnaise, and for dessert, Calisson iced parfaits, orange supremes and crispy tuiles.
The theme of the national final will be concocted by the three-star chef, Eric Frechon.
As in 2023, it is a Pontivyenne, Salomé Carnac-Audic, who will represent Brittany during the national final which will take place on January 13, in Lyon or Paris.
Attracted to cooking since she was little
Following a resignation, Salomé was able to train for this competition.
But I started training a month after the other candidates. My cooking teachers encouraged and supported me in my approach. I was attracted to the world of cooking when I was little. This allows me to assert my personality, my passion especially for baking. And then, I like to develop my spirit of initiative and progress in my skills.
Salomé likes a job well done. “It’s important to me as well as the creative spirit.”
For Salomé Carnac-Audic, January 13, 2025, will mark the next step. She is looking forward to knowing the theme so that she can prepare for the title of Best Apprentice Chef.
