In her kitchen in Albi, Stéphanie Callau makes shortbread biscuits, decorates them with sugar paste and sells them on the market in Albi and Gaillac.
On the Madeleine market in Albi, Stéphanie Callau’s colorful biscuits catch the eye of passers-by. “Some people think they’re candy, but not at all,” jokes the pastry chef. These round or rectangular shortbread cookies are made by the pastry chef and are covered with colored sugar paste in the form of flowers and leaves.
These little decorated cakes, based on grandmother’s traditional recipe, come straight from Stéphanie’s kitchen. A hobby that became her second job, since she created her business “Les biscuits de Fanny” last March. In addition to visiting the markets every weekend, the Albigensian woman from time to time places her creations in businesses in the city and surrounding areas. Recently, she provided a hairdresser from Carmaux to resell her biscuits.

With eggs, sugar, flour, butter and sugar paste, the pastry chef lets her imagination run wild and creates these decorated cookies. Stéphanie has a taste for detail and enjoys cutting the sugar paste to add the final elements to these cakes such as the heart of a flower or the veins of the leaves. “I like the poetic and joyful side of these cookies. There is a meditative and very pleasant side to decorating these cakes,” explains the Albigensian. The result is appetizing cakes that you want to share or offer to loved ones.
To vary the pleasures, Stéphanie enjoys playing with flavors that change according to the season: after flavoring her lemon biscuits this summer, she is focusing on speculoos and coffee for this fall. To continue to reach an ever-wider audience, it will soon launch a range adapted to people with diabetes, with special ingredients and a limited dose of sugar.
