Many of us freeze our bread. It must be said that it is very practical for extending the life of this food which tends to dry out very quickly. And yet, this practice should in reality be avoided or at least must be adapted. In fact, we generally store our bread or baguette directly in the paper bag from the store in the freezer. A harmless practice which turns out to be dangerous for health, as revealed by our colleagues from 7sur7. In addition to altering the taste, it does not prevent air from circulating freely and therefore bacteria from proliferating. Although freezing slows down the development of micro-organisms, it does not stop it. Which means there is a good chance that bacteria will grow in the crumb and on the crust of your bread. In addition, this proliferation starts again once you have defrosted your toast. Bacteria which, once ingested, could make you sick, which we would prefer to avoid.

But then how to do it? If you wish to continue freezing your bread, you must place it in an airtight bag. Once you take it out of your freezer, it is advisable to place it on a rack and let it defrost slowly in the open air. It takes between 30 minutes and an hour. The best is even to place it for a few minutes (only) in the oven or toaster if you want to maintain the crunch of its crust. The microwave risks significantly changing the texture of the crumb, so avoid it.

Remember that it is not recommended to freeze food after having defrosted it for the first time and that even frozen, bread can be kept for a maximum of six months.
