The Oldü bakery and its owner Ludovic Guillot are not the only ones to have won a prize this year in Nantes: the ArnO bakery, at 16 rue de Verdun, run by Arnaud Bousserolles, was rewarded.
This won first place in the ranking of the best galette des rois in the “creative” category of the Loire-Atlantique department, organized by the Federation of Bakers.
30 years in the business
Arnaud Bousserolles has been a pastry baker since he was 16. For 30 years, he dedicated himself to his profession. After taking over the establishment on rue de Verdun, he decided to change his identity.
“Before it was a hot spot, when I started again I wanted to make homemade products. People appreciated having real products created by human hands and not by machines,” he explained to Nantes news.
A successful bet, from a bakery of three people, ArnO now has 20 employees and reap the rewards. The latest is the one received for its “Mandarine Sarasin” pancake. “It’s our fourth gold medal in the creative cake category.
Sworn next year
The recipe for his pancake is very thoughtful. “We did a lot of tests, it’s shared with the team, everyone gives their opinion,” insists the craftsman with a smile.
Arnaud Bousserolles will unfortunately not be able to represent himself in this category next year. As a gold medalist, he will sit on the jury. However, he plans to present himself in the frangipane category.
