Worldskills is a movement serving youth with the mission of spreading knowledge of professions and highlighting passion and know-how. Leny Lesage, young apprentice chef at the gourmet hotel-restaurant, Relais du Gué de Selle, registered for the competition.
He is in his second year training at the CMA (Chamber of Trades and Crafts) in Laval Buron-Réaumur. He was selected during the semi-final in La Roche-sur-Yon (Vendée).
“This competition allows me to create my own recipes with chef Anthony Detemmermann, indicates Leny Lesage, resident of Grazay. I presented a roast chicken supreme, accompanied by crispy polenta cannelloni, pastilla-style confit thigh stuffing and a strong minty jus. »
Chef Anthony Detemmermann expresses his satisfaction: “These are, in a way, the Olympics of the professions. Leny qualified for the regional final, which will take place on March 8 in Angers. I hope he will be selected for the national competition in Marseille. It is satisfying to see motivated young people taking on such challenges. Leny must design three recipes and a dessert for the finale. »
