Located in the premises of the former Siphon, opposite the courthouse, this address promises to bring traditional French cuisine up to date. Opening today.
For them, it's a return to business. After having distinguished themselves in Saint-Cyprien-sur-Dourdou, then twice in Rodez – with the KMJ then the Jacobins, today, the Terrasse d'Hugo and the former Central – Magali and Julien Estivals opened their fourth address, today, on Boulevard Laromiguière.
They have completely transfigured the Siphon café to transform it into a bistro called La Marquise! On the menu, the professionals promise to restore the finest letters of nobility to traditional French cuisine. “It’s a niche that is less common in Rodez. We eat very well, we have excellent brasseries, but here, we try to have an offer that changes a little”hopes Magali Estivals. Thus, certain traditional dishes which have somewhat disappeared from the radar will make their return to the tables of the Marquise, such as frogs' legs or other terrines. “We want to get back to basics!”she summarizes.
“Fresh and seasonal products”
“The menu will of course change with the seasons. Likewise, we will only offer homemade dishes made with fresh produce”promises the restaurateur. In this sense, a pastry chef was notably recruited to complete the kitchen offering. To run the machine, there will be six in total. Magali will be responsible for managing the room, Julien will be behind the stove, both supported by four employees.
Transformed interior
For the couple, this is in any case a great adventure. Immersed in the final preparations yesterday, they did not hide their impatience at the idea of finally opening. “I've been wanting this address for a whilemouse Magali Estivals. Facing the courthouse, the location is ideal!” By its location therefore, but also its configuration. “It’s a premises on a human scale, we hope to create a friendly space”she rejoices. The restaurant has a capacity of around fifty seats, supplemented by an outdoor terrace. The result of a total overhaul of the premises, which has benefited from a real facelift. “We destroyed everything ourselves and since September, the craftsmen have worked extremely well to create this space”thank the professionals. And to stick to the theme proposed on the plate, of course, a canopy embellishes the front of the restaurant!
First day of opening today. Otherwise, guests are welcomed Wednesday to Saturday, from 8 a.m. until late evening.
