Chocolates, croissants, salads, sandwiches and breads are once again on sale at 6, avenue de l’Hers in Baziège. The Fournil, the bakery in this Lauragais villagehas just reopened its doors this Tuesday 1is October 2024. Two years after a terrible fire which completely destroyed the premises of the business born in 2013. “From the store, we could see the sky,” recalls Marie Gilletsaleswoman in the bakery managed by Eric Gillet. “Everything has been redone,” she tells Voice of Midi Lauragais.

On Monday November 28, 2022, the fire started from the first floor and spread to the second. Debris and water had damaged the ground floorwhere the sales space is located.

They had moved to Labastide-Beauvoir

To continue its activity after this serious disaster, the team moved to Eric Gillet’s other bakery, The Bread Workshop in Labastide-Beauvoir.

If Le Fournil is indeed back in Baziège, several changes should be noted. Firstly, the Fournil premises no longer extend over three levels. The second and third floors will house apartments, under construction.

It is now a bread depot

Second, there is no longer a laboratory at the bakery. As a result, nothing is designed in Baziège anymore. Le Fournil is now a simple bread depot. “We make everything in Labastide-Beauvoir,” says Marie Gillet.

A choice which results in particular from the difficulties encountered by the business in finding personnel. L’Atelier du pain is still looking for a baker. “We’ve been looking for one for four months and haven’t found one,” sighs Marie Gillet.

Reduced hours

THE Hours have also been reduced. Le Fournil is open Tuesday to Saturday from 7 a.m. to 1 p.m. At least initially. “We’ll see how it gets going again and we might look for staff,” said the saleswoman.

“We have had good feedback. It takes time for it to start again», she adds.
