During a press conference, the Lyon municipality revealed this Tuesday morning the names of the new businesses which will be set up from 2026 within the Halles Paul Bocuse in Lyon in the 3rd arrondissement.
This follows a competition for concessions from traders of the symbolic place of Lyon gastronomy launched last April by the City of Lyon. This procedure, imposed by a 2017 law, led to a particularly long Call for Expressions of Interest (AMI), as Grégory Doucet, mayor of Lyon, explained: “The AMI lasted five months, because we wanted to give professionals time to prepare for qualitative applications.”
Of the 64 files received, 46 locations were renewed for existing traders. The concessions are valid for a period of 10 years and 6 months from February 2026. Thus eight locations will change tenant: three were not the subject of applications, four files were not retained, and one location will see its typology evolve in store.
In this sense, five locations have been allocated to new businesses. This is the caterer Lello at Homefrom the cheese maker Janier, with the best worker in France Christian Janier, from the restaurant bar The Horseshoe 2of Chardonnay & Cie and the producers' store Lyon Lands. They respectively replace Tacca via Rolle, Beillevaire, Le fer à cheval, Nicolas and Cerise et Potiron. “It was very important that these Halles could remain an emblematic place of Lyon. This jewel must continue to make the city shine,” says the environmentalist mayor.

Three more slots to fill
-Note that three locations have not been the subject of an application by the current merchant or competition: Chez Mr Paul Van Cappel, Cerise et Création and Petrossian.
Despite the low number of applications for certain spaces, Camille Augey, deputy mayor in charge of the Sustainable Economy, rules out any questioning of the attractiveness of the Halles: “It's not a question of a lack of attractiveness. Applying against peers that you know and meet on a daily basis remains a difficult exercise.” justifies Camille Augey, deputy mayor in charge of the Sustainable Economy.
To fill the three vacant locations, a new AMI will be launched this Monday, January 20 and open until February 17. All interested food businesses will be able to apply according to the same selection criteria as the first call.
Ultimately, the Halles will benefit from work to bring them into conformity and be refreshed. A fixed rent, based on the number of square meters, will be accompanied by a variable portion linked to the turnover of traders. This measure, recommended by the Regional Chamber of Auditors, will be used to finance these developments, as the mayor of Lyon clarified: “Les Halles are autonomous, and these charges will ensure their modernization.”
