“We started from nothing”
The European stage was not easy. “We started from nothing, we had no experience in this competition and, above all, we were coming out of a big period with the holidays and all the logs to prepare“, says Pepe.
To convince the jury, the Belgians had to participate in six stages. Among other things, they made a passion fruit-basil ice cream, a rocket-shaped cake, and a magnum infused with chai. “We focused a lot on taste and a little less on decoration, which perhaps failed us.“Surprising step: an ice cream had to be made with products usually thrown away.”We made ice cream with all the cocoa beans. So we kept the skin (cascarilla) for example.”
In 2026, the Europeans will face Japan, Singapore, South Korea as well as a Chinese team and four American teams still to be selected.
