For this great baptism ofEpiphany 2025, Flora DaviesPastry Chef at the head of the Biscuit Manufacture, has chosen to honor tradition with a frangipane-almond pancake. A classic, certainly, but here, simplicity becomes an art thanks to unparalleled know-how and details that make all the difference!
The Galette des Rois 2025 from Manufactures Alain Ducasse sublime exceptional ingredients. It all starts with an inverted puff pastry, made from flour from the Versailles mills and golden brown to perfection. Its creamy heart contains frangipane, mixing almond cream and pastry cream, enhanced with freshly shelled and roasted Sicilian almonds with their skins. No more classic almond powder, here they are ground with a generous particle size, providing a depth of taste and a slightly crunchy texture. A unique process which gives all its character to this creation.
Cherry on the cake (or rather bean), a artisanal ceramic beanhandcrafted in France, is hidden in each pastry. A nod to the big sister of all Manufactures, that of chocolate, the bean takes the shape of a cocoa pod. And for the lucky ones, ten pancakes contain an exclusive red bean, offering a 1h30 VIP workshop with the Chef. Royal, non ?
