The Galette des Rois 2025 from Manufactures Alain Ducasse sublime exceptional ingredients. It all starts with an inverted puff pastry, made from flour from the mills and golden brown to perfection. Its creamy heart contains frangipane, mixing almond cream and pastry cream, enhanced with freshly shelled and roasted Sicilian almonds with their skins. No more classic almond powder, here they are ground with a generous particle size, providing a depth of taste and a slightly crunchy texture. A unique process which gives all its character to this creation.
