Cooking, decoration, almond composition (frangipane but also almond cream, no sectarianism), lamination and cut resistance… Everything was carefully evaluated during the competition for the best almond pancake in Greater Paris organized by the union of bakers of Greater Paris on December 6. The plethoric jury of 70 people tested 165 cakes from all over Île-de-France. History doesn't tell who collected the most beans, but we know who was crowned best pancake of Grand Paris 2025! This is Lionel Bonnamy, from Fabrique aux Gourmandises in the 14th. This king of pancakes is a real competition beast since he has already won this prize in 2021, but also that of best croissant 2019!
Maison Mauvieux in the 18th restores the image of the right bank by coming second. Note the great performance of Yuki Hayato from the beloved Rayonnance pastry shop (whose Yule log we loved), who placed 10th for a first participation.
