Every day a little more, Kristen Stephan discovers her region and loves it more and more. Mother of a 9-year-old child, she wondered what family activities existed in Sainte-Anne-sur-Vilaine. In vain.
By inquiring and exchanging, thethe idea of a tavern came up a lot in minds. For her part, Kristen Stephan wanted to change professions. She who has already worked in catering and socio-cultural activitiesopening a tavern has become a challenge to accomplish.
“I started to dream about it, then to have the shoulders to get started,” continues the 42-year-old woman.
The sale of a place then came at the right time: le Carpe Diem. “It was the main merchant of Sainte-Anne who ran this place. A place near the pond with straw hut structures and inflatable games. But retiring, she decided to sell, with all the equipment,” says Kristen Stephan.
So she decides to meet her when she sees this offer and it's the favorite on the spot.
It's quiet, by the river. I immediately had lots of ideas for this future tavern.
A sustainable development approach
Kristen Stephan wants to create a real tavern feel there, with a popular ball for all. A place that brings together young and old, in conviviality and entertainment.
Without forgetting the sustainable development approach that the entrepreneur wishes to respect. “The cuisine will be homemade with local produce. Same thing for drinks, we have very good producers less than 20 km away.”
In this aspect, she also wishes fight against food waste. Every lunchtime, there will be three meal options, with a main course, but also hot sandwiches and grilled meats. For the evening, it will only be aperitif boards and tapas which will be proposed.
On the entertainment side, Kristen Stephan plans to surround herself well,invite companies and cultural actorsin order to offer themed evenings, such as fest-noz.
An online prize pool of €5,000
But for now, the fate of Karpe Diem is in the planning stage. In fact, the forty-year-old needs raise €5,000 in order to bring the tavern to life. To do this, she launched an online prize pool, which will end on December 30, 2024.
“Nothing has been done yet. This jackpot can also be participatory. Those who make donations will be able to benefit from advantageous offers once the tavern is open,” she announces.
Karpe Diem could become a family tavern, open to all and offering affordable prices. Kristen Stephan hopes to open for her first season from end of April/beginning of Mayuntil October. Her main desire is to continue what she has already put in place to keep the Karpe Diem tavern alive.
