A few days ago, we informed you that after five years of existence in its current configurationThe Roof & Origines at the Hôtel-Dieu in Rennes closes for several months… Before reopen in brand new premisesstill on the historic site, but on either side, and even under the chapel, of the Hôtel-Dieu. The four project leaders presented to news Rennes the future place, still under construction, and some sketches future spaces, once the work is finished.

At the end of this winter morning, we access via a service door which will not be the future entry. “When we open in the spring, you enter on the rue de Saint-Malo side, via the Jeanne Chauveau passage and very briefly take the ambulatory of the cloister before returning to the corner of the latter in this space to the left of the chapel”, explains Manuel Bouillon, general coordinator.

From the entrance, what immediately stands out in this new place where only the concrete envelope, partitions and windows were built, it’s the wide open space. “You will find in this first part reception and coffee shop and just behind on the left the restaurant”, presents Romain Jolyone of the project leaders and head chef of Origines.

With the climbing room on the lower level and the microbrewery, the total surface area remains the same as previously with 1,500 square meters“but we are gaining space, because there are fewer wide corridors that are not very useful like in the old part where we were until then,” he continues.

Still an open kitchen, but more efficient

The chef continues the visit to the space in which the restaurant will be located in a few months.

Like today, the kitchen will be open to the room to show off our know-how.

And it will also be much more efficient. “It will be new and much more functional with the condensed storage spaces and right next to it. We won’t have to run to the basement and carry a 25 kg bag of flour. We therefore gain in comfort and efficiency. »

The restaurant will increase from 40 to 70 seats

And pastry laboratory will be located at the back of the kitchen to isolate this activity from the rest. “It will allow us to develop the catering side of welcoming groups. »

Indeed, this is one of the major areas of development on which the team will work with these new installations. On the room side, the capacity will increase from around forty places to around 70 at opening. “We have quite a few reservation requests, particularly for conferences organized at the Jacobins convent, but before, it was complicated to accommodate these groups in terms of profitability. »

Seven climbing areas

Groups which could thus also be welcomed in one of the seven climbing areas at the lower level, that of children : “We are doubling and dividing in two this space which is quite dear to us, because we are specialized and we have this real uniqueness for young people”, begins Olivier Lhopiteauin charge of the climbing center.

“We are setting up a castle twice as bigwith a surface for climbing, but also moving up and a fire bar to come down. They will finally have a wall like the adults, but adapted for them with all the necessary security elements. The place will evolve throughout the day, when the little ones will no longer be there, in a room for groups. »

Generally speaking, climbing routes go from 50 linear meters to 100 linear meters and will allow you to enjoy a place that will not be overwhelming. The place will also offer the possibility to everyone, people with disabilities and seniors, to access the discipline.

Training area, muscle strengthening, spray walls…

Other mixed spaces will increase the number of courses. Some of them will benefit enormous glass roofs which will have seen on the exterior walls of the chapel at the upper level. “We are sure the climbing of bloc, that is to say without shield, with large mattresses on the ground,” recalls Olivier Lhopiteau.

Users will benefit from a real training and muscle strengthening space. Under the chapel, there will be a spray walls space, made up of numerous outlets favoring thousands of climbing combinations. “Beside, above this space, the beer will be brewed in the seven fermenters of the microbrewery. We will have a double height patio with a mezzanine to stop the climb and start higher. »

Finally, in a more confidential and restricted space, there will be a climbing wall which will allow climb, lie further forward or backward.

We try to distinguish ourselves, we know each other between the different climbing gyms in Rennes. We all have something complementary and each has its audience, its identity. Our location in the city center in a historic place, dear to many people from Rennes who were born here, is an asset.

The Roof & Origins will bear witness to the history of the Hôtel-Dieu for a long time to come. ” There will be lots of traces of what was here before. Elements that we have today will be moved and installed in our new premises, such as a light box that we have, specify the project leaders. They will make the link with the past which will gradually disappear. »

A terrace in the cloister

Once the work is completed in the cloister, the hybrid venue will also benefit from a terrace. ” And we will still organize as many eventsas free as possible and open to as many people as possible between discussion circles, conferences, concerts, artistic performances, markets. »

For this, the team of a forty employees could eventually evolve. “From the beginning, we internalizes all trades and support functionslike housekeeping and accounting, that way we master them and adapt very easily.

No specific opening date

But when will the new premises of The Roof & Origines open for which approximately 3 million euros were invested ? For the moment, the managers are not giving any precise date, because the deadline for the end of the work has already been pushed back the first time.

In the meantime, the team plans to rest, continue to train and prepare in advance “lots of things they don’t have time to work on” usually. A change of visual identity is also being considered.
