It was at the foot of Angers Cathedral, on December 13, that chef Clément Paillard unveiled his new address: The Table of Clément Paillard. Two years after closing his first restaurant, Jeunes Pousses, the chef is embarking on a new, more gastronomic adventure.

At La Table de Clément Paillard, the cuisine is meant to be faithful to traditions French. Vegetables occupy a preponderant place and particular attention is paid to the use of the products – “We don’t throw anything away” explains the chef. On the menu, a Braised leek with charcuterie sauce and raclette mousseor even a Langoustine glazed with homemade miso. As for desserts, the chef, trained as a pastry chef, imagines them as a duo with his second-in-command.
The room is adorned with blue shades and light wood (Anjou pear wood), giving the space a warm look. Anxious to make the artisans of the regionClément Paillard had his knives made in Angers, just like the tableware, 100% handmade. The restaurant matters 26 place settings.
Although some technical problems tarnished the opening, La Table de Clément Paillard was still sold out for lunch and dinner. And if the star is an objective, the chef prioritizes his primary mission above all: « Bringing happiness to people, both to the brigade and to the guests. »
