Ypseli is preparing to open its doors near Montorgueil, in the pure vein of Athenian neo-gastrotavernas.
With the new year approaching, it's time to find out what openings are expected, start 2025particularly on the side of restaurants. In Paris, winter promises to be as sunny as ever with the inauguration of a nouveau Greek restaurant a stone's throw from Montorgueil: Ypseli.
And restaurant certainly, but coupled with a bar who himself hides a grocery store and a caterer where to get sandwiches. All this in one place. Simply draw the thick curtains to go from the restaurant to the grocery store and caterer, and back again. Unlike the vast majority of Greek restaurants in Paris which rely on a folkloric decoration made of blue and white, Ypseli chooses the rawness and the design of Greek gastrotavernaswith its 5 meter high ceilings and its slate dome with Art Nouveau clock, all in a building classified as a Historic Monument.
And the team explains: “Like bistronomy in France or neo-trattorias in Italy, Greece has also brought its culinary traditions into modernity with the movement of gastropubsvery dynamic for several years in Athens. The idea? A new generation of chefs who work hand in hand with local producers and winegrowers, to renew the inspirations of the classic repertoire with beautiful products.”
The founding team is made up of Syméon Kamsizogloupassed through the kitchens of Frédéric Anton, Joël Robuchon and Jean-François Piège, from chef Fragiskos Dandoulakis and of Delphine Pique. Together, they imagine a Greek cuisineat the same time family and contemporary : Cretan-style lamb and fries in olive oil, octopus confit with eggplant, chickpeas simmered for seven hours… An odyssey through the Greek terroir to be discovered very soon.
