The Médovik – France Bleu
Do you know the medovic ? Its name in Russian means “honey cake”. Its invention dates back to the beginning of the 19th century in the kitchens of the Russian Emperor Alexander I.

The medovik recipe
Ingredients :
For the cookies:
- Sucre
- Honey
- Butter
- Flour
- Sel
- Baking soda
For the garnish:
- Full cream crème fraîche (or sour cream if available)
- Icing sugar
- Seeds from a vanilla pod
- Cardamom powder
Preparation :
- Prepare the cookie dough: boil water in a saucepan, remove it from the heat, and place a bowl on top for a bain-marie.
- Pour the sugar, honey and butter into the salad bowl and melt them gently.
- Then add the flour, salt and a little baking soda. Mix to make a soft, sticky dough.
- Cover the dough with cling film and place it in the refrigerator for 2 hours.
- Prepare the vanilla cream: In a large salad bowl, mix icing sugar, full-fat crème fraîche, the seeds of a vanilla pod, and a pinch of cardamom powder.
- Whip the mixture until you obtain a light and creamy whipped cream.
- Place the cake in the refrigerator overnight so that the cookies moisten with the cream.
- Assemble the cake: on a serving dish, place a biscuit and spread a layer of cream on top.
- Repeat the operation, alternating cookies and cream, until the ingredients are used up.
- Cover the entire cake with a thin layer of cream.
- Mix the leftover biscuits into crumbs and use them to completely cover the cake.
Repos : place the cake in the refrigerator overnight so that the biscuits moisten with the cream.
