Salty or barely baked cookies. And sweets, but “the healthiest possible”, specifies Vanessa Crouzil, co-owner of Biscuit Bakery. In the Esquirol district, Toulousethis new cookie shop opened on June 6, 2024, rue des Tourneurs, in place of a former store Bubble tea. Heading to the United States for the taste buds.

Biscuit Bakery, with its pink and blue “California-style” storefront, offers a range of cookies that are both classic and twisted. Because among the 23 recipes available to cooks and pastry chefs, some cookies are sans glutenothers sweet and others salty.

We have a cookie with feta and olives, and another with dried tomatoes and pamesan. Perfect for lunch, an aperitif or those who prefer savory.

A modified raw cookie dough

But that’s not all. Another product, in vogue “among young people”, has become a flagship at Biscuit Bakery. “It’s the cookie dough“It’s raw cookie dough, but we modified the recipe so that we can eat it directly in a sort of little ice cream pot,” explains the manager.

Toppings of your choice and that’s it. The choice appeals to creative people, just like black sesame cookies or to matcha. When other more classic cookies remain essential… This is particularly the case with hazelnut chocolate or pistachio cookies.

Cookies that are not too sweet but delicious

“We want good things without industrial products, with good ingredients, like I can make at home for the children. So the cookies are not very sweet, but still delicious! », smiles the great lover of this little American dessert.

But the range could still evolve. “Our pastry chef does tests in our lab, at the back of the store. Everything is homemade and baked every morning,” says Vanessa Crouzil.

The business could well continue, since the two owners, Vanessa and her husband Julien Crouzil, wish hire an additional pastry chefas well as a seller, and even open a second store in the Pink City.

Soon a terrace?

But until then, the owner couple continues to innovate. They could even add to the map their own glace. It will complete the alternative snack offer, and can also be accompanied by drinks such as latte and some are matched. To enjoy in the sun?

Not at this time. Biscuit Bakery does not currently have seating. But a request has been filed with the city hall to have “a small terrace with six seats« .
