Culture in France arrived by chance 60 years ago. Returning from New Zealand, a farmer grew kiwis in his garden. Today, the Adour valley provides a third of French fruit production. Its aromas appeal to chefs like Aurélien Bellocq, from the Au Pas de Vent inn, who develops 100% of his recipes with local products. “When you look closely, it’s still an original fruit.”he said. That day, he cooked a clafoutis with almond milk and kiwis, on a carpaccio of green and yellow fruits.
