She is Cuban, he is Argentinian. They met in Périgord and the romance lasts. Christian Borini and Yadira Didi Lopez Hernandez made 3 Sens in Sarlat, in the heart of the miraculously preserved Renaissance side, “the” gourmet and light table of the moment to discover. They welcome there with professionalism and kindness, offering – this is Yadira’s role – wines from Argentina, such as the white Torrontes Alma Salta 2022 or the red Malbec Piedra Negra signed François Lurton in 2020, which accompany new wave Perigord cuisine .

Christian, trained in Argentina, spent in beautiful restaurants in Spain and the Dordogne, cooks lively, fine, creative dishes with local regional accents. Smoked tuna tataki with I love whitesambaizu sauce, precedes the royal with duck foie gras IGP Périgord, the perfect egg with summer truffles, the ravioli with porcini mushrooms and old county in miso broth and vegetables with roasted hazelnuts or the fillet of Borrèze trout cooked on the skin with its variation of peas and seasonal red fruits works wonders.

We add the saddle of Quercy lamb roasted in aromatic butter in a crust with fresh herbs and morel sauce, the variation around the Périgord walnut with its walnut liqueur granita or even the panna cotta with ginger and poached pear, biscuit clafoutis, pear granita.

The somewhat dark and modern decor doesn’t add up to much, but the thin terrace in the heart of the preserved old town is a delight.
