Alphonsine's sweets, happiness to be enjoyed urgently

Since July, delicious cooking smells have once again been escaping from the old restaurant located on rue de Manestraou, not far from the center of the village of Rivière. It is here that Alphonsine Tourrès, a pastry chef by trade, has set up her cooking workshop, equipped with the equipment with which she creates many sweet and savory treats.

Alphonsine worked for around ten years making Landes tourtières in Saint-Sever then in . Seduced by the profession, she then spent a year completing a CAP in pastry before setting up on her own and selling her production on the Landes markets. “I was thinking of opening a shop, but I really like the atmosphere of the markets and the contact with customers, it’s freedom,” smiles Alphonsine. The original Rwandan has become a true Landese, expert in local specialties. “I make Landes pastis, cannelés, almond tuiles, cakes and cookies,” explains Alphonsine. In Dax, Soustons and Saubusse

Beyond these pastry classics, Alphonsine adds a touch of exoticism with the making of excellent gazelle horns and, above all, empanadas. This South American specialty takes the form of turnovers stuffed with meat, vegetables or cheese. “They are very successful, there are some with chicken, chorizo, tuna or salmon, but also vegetarian ones with spinach,” explains Alphonsine.

For the moment, you can find your van at the Dax market on Saturdays, the Soustons market on Mondays and, more recently, in front of the Saubusse grocery store on Thursdays. But the one who is present every day in her workshop to be able to offer fresh products to her customers intends to expand her activity.

“I do seasonal markets during the summer, but during the year it's difficult to get places, I hope to find a few more points of sale. »
